Recipe: Applesauce Oatmeal Cookies

makes about 30 cookies
1 cup unsweetened applesauce
1 1/4 packed cups light brown sugar
2 large eggs
1 tsp vanilla
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups oats (quick cooking or old fashioned)
1 cup dried cranberries
Preheat the oven to 350 degrees.
Use a large mixing bowl to combine 1 cup unsweetened applesauce with 1 1/4 packed cups of light brown sugar, 2 large eggs and 1 tsp of vanilla and whisk that up.
At that point, add 1 1/2 cups all-purpose flour, 1 tsp baking soda, 1 tsp ground cinnamon and 1/2 tsp salt and mix that to combine.
Finally, add 3 cups oats and 1 cup dried cranberries and mix that until everything is completely combined.
Divide the dough onto two baking trays.....you'll end up with about 30 cookies total...and place the trays into the preheated oven.
They'll take just about 14 minutes to bake and you'll want to switch the trays from top to bottom about halfway through.
Let the cookies cool down on the trays for a couple of minutes and then transfer them to cooling racks to finish cooling down.
These are best soon after baking. Because of the applesauce substitution, they end up having a different texture than cookies made with butter....just remember how much better they are for you!
These have a tendency to stick a little bit to the baking tray (because of the lack of butter)....use parchment paper of a baking spray on the tray if you like.
