Recipe: Smoked Ham, Cheddar Cheese and Green Onion Biscuits

SERVES:
8 - 12 biscuits

INGREDIENTS:

4 cups all-purpose flour
2 Tbs baking powder
2 Tbs light brown sugar
1/2 tsp kosher salt

6 Tbs unsalted butter

1 cup diced smoked deli ham
1/2 cup chopped green onion
4-ounces grated cheddar cheese

1 1/2 cups milk

flour for dusting work surface

eggs for frying as needed


PROCEDURE:

Preheat the oven to 400 degrees and use a large mixing bowl to combine 4 cups all-purpose flour with 2 Tbs baking powder, 2 Tbs light brown sugar and 1/2 tsp kosher salt.

Mix it up and add 6 Tbs cubed cold unsalted butter and use a pastry cutter to incorporate that.

And then, at that point, add one cup diced smoked deli ham, a scant 1/2 cup chopped green onion and 4-ounces grated cheddar cheese and mix that together.

Then add 1 1/2 cups milk and gently fold it together until it just forms a ball.

Roll that out on a floured surface into a 8 x 12 x 1-inch thick rectangle and cut it into 8 equal squares. (see hints below)

Place those onto a baking tray and place that onto the center rack of the preheated oven.

This size biscuit is going to take around 25 minutes to bake and you'll want to let them cool down a bit before slicing them in half and serving them as a fried egg sandwich if you like.

HINTS:

Use buttermilk instead of regular or 2 % milk.

Cut the rectangle of dough into 12 squares instead for smaller, more normal size biscuits.
