Recipe: Chocolate Flourless Torte

INGREDIENTS:
1 9-inch cake pan, buttered and then lined with circle of parchment paper (see hints below)
1 9 x 13-inch baking dish to make water bath for baking torte
2 sticks unsalted butter (1/2-pound)
1-pound bittersweet or semi-sweet chocolate chips
1 Tbs instant coffee (optional)
1/2 tsp ground cinnamon
6 large eggs
fresh berries for serving (optional)
powdered sugar for garnish (optional)
PROCEDURE:
Preheat the oven to 425 degrees and butter one 9-inch cake pan, then line it with a circle of parchment paper after buttering it.
Heat a full teapot of water on the stove top and also use a double boiler to melt 2 sticks of butter with 1-pound of bittersweet or semisweet chocolate chips.
Next, use an electric mixer to whip 6 large eggs on high speed, until they've tripled in volume.
Just as the chocolate and butter come together, whisk in 1 Tbs instant coffee and 1/2 tsp ground cinnamon and take it off the heat.
Let the chocolate cool down for a few minutes and then slowly and very gently fold in the beaten eggs. Transfer that to the prepared cake pan, inside of a 9 x 13-inch baking dish, add just enough hot water to come half way up the cake pan, and then very carefully transfer that to the center rack of the preheated 425 degree oven.
Be super careful putting it in and taking it out of the oven and, keep your eye on the clock, it only takes 17 minutes to bake.
As soon as it comes out of the oven, very carefully transfer it to a cooling rack for 10-15 minutes and then cool it down completely in the fridge.
At that point, run a knife around the outside edge of the torte, to help release that, and then place the pan on a low burner for 10-15 seconds to help release the bottom.
Then invert a large plate over the top of it and flip the whole thing over to release the torte.
Remove parchment paper circle, carefully slice and serve with fresh berries and a sprinkling of powdered sugar.
HINTS:
This needs to be baked in a water bath so make sure your cake pan will fit inside of a deep sided baking dish before beginning.
A double boiler consists of one pot 1-2 inches of simmering water with a mixing bowl on top that isn't in contact with the simmering water.
