Recipe: Apple Fritters

SERVES:
makes approx. 25- 30 fritters

INGREDIENTS:

1 1/2 cups all-purpose flour
2 tsp baking powder
1/4 cup light brown sugar
1 tsp ground cinnamon
1/4 tsp ground ginger
1/2 tsp salt

1 1/2 cups peeled, 1/4-inch diced apple

2 large eggs
2/3 cups milk
1 tsp vanilla

real maple syrup as needed for serving


PROCEDURE:

Get the dry ingredients together first by combining 1 1/2 cups all-purpose flour with 2 tsp baking powder, 1/4 cup light brown sugar, 1 tsp ground cinnamon, 1/4 tsp ground ginger and 1/2 tsp salt and mix it up.

Peel and core the apples and cut them into 1/4-inch dice and, as soon as you have 1 1/2 cups, immediately add it to the flour and toss to coat.

Get the wet ingredients together by combining 2 large eggs with 2/3 cup milk and 1 tsp vanilla....whisking that together.....and then adding that to the dry ingredients and folding everything together until it is just combined.

Add 2 Tbs vegetable oil to a nonstick pan on medium heat and, once the oil is hot, use a tablespoon measure to scoop 5-6 fritters into the pan at a time.

Stay with them and let them go for a couple of minutes on the first side.....then carefully flip them over and finish cooking them through on the second side.

Then serve them up, while they're still nice and warm, in individual bowls with real maple syrup over the top!

HINTS:

The first batch in the pan will be the most challenging....after that you'll have an exact idea about the perfect temperature setting.

You can turn the oven onto a warm setting and keep the cooked fritters warm as you go.
