6-8 as a side
juice of 1/2 lemon
2 pounds apples (such as Empire or Golden Delicious)
1/3 cup apple cider (or cranberry juice or water)
1/3 cup dried cranberries
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 cup maple syrup (see hints below)
Add the juice of 1/2 large lemon to a large mixing bowl and then peel, core and rough chop 1 - 2 apples at a time.....adding them to the bowl and tossing them with the lemon juice as you go.
Once they've all been tossed in the lemon juice, add 1/3 cup apple cider to a deep, heavy bottomed stainless steel pot and add 1/3 cup dried cranberries, add the apples, add 1/2 tsp ground cinnamon and 1/4 tsp ground ginger....toss to combine, turn the heat to medium high and put a lid on top.
The apples will only take 4 - 5 minutes and, once they're cooked through but not too soft, add 1/4 cup maple syrup and use a potato masher to mash them until they have a nice chunky consistency.
Let it cool down a bit and serve it up while it's still warm or cool it down completely in the fridge.
You could add 1/4 - 1/3 cup light brown sugar to the pot with the cooking apples instead of adding the 1/4 cup maple syrup at the end of this recipe.
