Recipe: Apricot Ginger Glazed Pork Chops with Sesame Broccoli

SERVES:

INGREDIENTS:

approx. 3 cups broccoli florets
1 Tbs sesame oil
1-2 Tbs sesame seeds

2 center cut pork chops
salt and pepper
1-2 Tbs vegetable oil for sauteing pork

approx. 1/3 - 1/2 cup water

for the glaze:(see hints below)

1/2 cup apricot jam
1 generous Tbs peeled, finely minced fresh ginger
1 tsp finely minced garlic
4-5 shakes soy sauce
juice of 1/2 lime


PROCEDURE:
Cut the broccoli into bite size florets and put that into a saute pan...with about 1/2-inch water, and then set that on the stovetop with a lid on top, but don't cook it yet.

Next, make the apricot glaze by combining 1/2 cup apricot jam with 1 generous Tbs finely minced fresh ginger, 1 tsp finely minced garlic. Add 4-5 shakes of soy sauce to that and squeeze the juice of 1/2 lime into it and whisk it up.

Season the pork with salt and pepper and sear it in a large heavy bottomed pan in a little oil, until it is browned on both sides and mostly cooked through. Then turn the heat down quite a bit, spoon some of the glaze over the tops, add a little water to the pan and put a lid on top to help the pork finish cooking through.

At some point, when the pork is close to being done, steam the broccoli on high heat until it is just about cooked through. Then drain that really well, add a splash of sesame oil and a good sprinkling of sesame seeds and cook that along for another minute or two and turn the heat off.

HINTS:

This makes enough glaze for 4-6 pork chops.

Take cooked pork chops out of pan and reduce glaze a bit before serving.
