Recipe: Hawaiian Style Fried Rice with Pineapple and Smoked Ham

SERVES:
4-6

INGREDIENTS:

approx. 3- 4 cups precooked and cooled white rice

1 medium onion, peeled and thinly chopped
2-3 Tbs vegetable oil for frying (plus more as needed)

1 Tbs finely minced garlic
1 Tbs finely minced peeled fresh ginger
1 - 1 1/2 cups diced smoked ham
1 - 1 1/2 cups well drained canned pineapple chunks
1/2 cup chopped green onion
soy sauce to taste
1/2 -1 cup chopped fresh cilantro

PROCEDURE:

If you don't have a wok, use a large heavy bottomed saute pan to saute one medium size, thinly chopped onion, in a little vegetable oil, to soften.

At that point add one generous Tbs each of minced garlic and minced peeled fresh ginger and cook that along a minute.

Then add 1 - 1 1/2 cups diced smoked ham and cook that along for a minute or two and then add a cup or so of well drained canned pineapple chunks and 1/2 cup chopped green onion and stir that in.

Next, add the rice and cook that to warm through, then season with soy sauce to taste and add a good handful of fresh chopped cilantro and it is good to go.

HINTS:

Canned Spam would be a more typical Hawaiian ingredient than the smoked ham. Either is fine.

If you have leftover rice, that's great, otherwise you need to plan ahead and cook it and cool it. A fresh pineapple would be great but canned pineapple works just fine.
